Weeknight Pasta

Adam and I are in the thick of things. He started a new job at a local publishing house in the city and I am in the midst of tax season (gulp!). After the mind-sucking work of printing, labeling, copying and saving tax related files - I love to come home and cook. Even though I am bone-tired, cooking and baking comes naturally. I don't have to think about it and I can play around and have fun. Besides, it's not like I am attempting to make something Gastronomic. This is a simple Italian meal.

Tonight, I'm making pasta with tomato sauce and sausage. It is so easy and perfect when you're really hungry. This recipe makes enough for plenty of leftovers. Perfect for lunches or tomorrow's supper.

Take one package of pasta and empty into a pot of water with a pinch of salt. Cook until al dente. Save a bit of the pasta water to add to the pasta sauce mixture in case it dries out.

In a skillet, add some oil to the pan for flavour (I used coconut oil).
Chop one small green pepper, small onion, clove of garlic and some crushed basil to the pan.
Cut up 5 large sausages (I used Italian) into pieces and add to the mixture.
Simmer ingredients until everything is golden brown.

Once the pasta and the sausages are cooked add them together and mix in some tomato sauce.

Serve on a plate and add a few dashes of Parmesan cheese to taste.
