Sweet Potato Roasties with Curry Mayo

I have a friend who loves my curry mayo. It is funny because there isn't anything to it. I learned to add curry powder to Helman's  Mayonnaise to create a tasty dipping sauce (from a chef no less!) a couple of years ago and have kept it in my repertoire. I pull it out sometimes and put it on a barbecued burger and whoa it is divine. Do that sneaky little trick and people will love you, I mean it. My favourite way to enjoy curry mayo is with sweet potatoes roasted in the oven. Pure magic!

To do:

Take 2 sweet potatoes, peel and wash them. Cube them into bite sized pieces.
Add to a bowl and mix in a clove of minced garlic, salt, pepper and a healthy amount of extra virgin olive oil.
Mix well and add to a baking sheet.
Bake at no higher than 325 degrees (olive oil burns at 350 degrees and thus becomes carcinogenic) for 25-35 minutes depending on preferred crispness, flipping them once.
Curry Mayo: a few dollops of mayo with a teaspoon of curry powder. 

Add the roasties to a plate with a side of curry mayo and you, my friend, have a lovely side dish for dinner! Or, if you are classy like me, you will eat the sweet potato roasties with curry mayo and call it dinner. I've done that more than once. It is always awesome.
